Love smoked salmon I will pick up smoked salmon at TJ's for our Easter brunch.
Salmon:
4 ounces kosher salt
2 ounces granulated sugar
1 tablespoon lemon extract
1 tablespoon lime extract
One 1 1/2-pound skinless salmon fillet
Spice-Poached Eggs:
1/2 cup distilled white vinegar
2 teaspoons paprika
1 teaspoon garlic powder
4 large eggs
Sea salt
Arugula Salsa Verde:
2 cups arugula or other mixed greens
1/4 cup extra-virgin olive oil
1 tablespoon capers
2 teaspoons dried oregano
2 teaspoons red wine vinegar
1 teaspoon garlic powder
1 teaspoon dried thyme
Sea salt and freshly ground black pepper
Toast:
2 tablespoons olive oil
4 slices bread, from a whole-wheat sourdough boule
2 ripe avocados
2 teaspoons lime juice
1 teaspoon garlic powder
3/4 teaspoon kosher salt
1 tablespoon chopped fresh herbs, such as chervil, chives, cilantro or parsley
Everything Spice Mix:
2 tablespoons poppy seeds
2 tablespoons white sesame seeds, toasted
1 tablespoon dried minced onion, toasted
2 teaspoons dried minced garlic, toasted
1 teaspoon pretzel salt or other coarse salt
For Serving:
1/4 cup olive oil
1/8 teaspoon lemon extract
1/8 teaspoon lime extract
Poached eggs may be held in cold water until ready to serve: transfer cooked eggs to ice water until cool. Reheat chilled eggs in simmering water for 10 seconds before serving

Looks tasty........but I eat my lox the old-fashioned way. Can't wait to make a recipé..........(!!!!!!)

I love Lox too, and this recipe is a great summertime dinner! But I would just buy the smoked salmon ready- made... I have cured it myself with success but just want less time in the kitchen!
Thanks for the idea! DH has a lot of diet restrictions and this one works!
