They do look good but just to clarify, enchiladas are made with corn tortillas. Use flour tortillas to make burritos or fajitas. I'm sure they taste good and like any dish you can use what you want but they really aren't enchiladas. I suggest making them next time with corn tortillas and see what you think. Enjoy, either way.
BTW, I miss TexMex. This New Mexico red or green sauce just doesn't do it for me. 😥

@Bridgegal The recipe calls for flour tortillas but you are correct. Traditional enchiladas call for corn tortillas. I will try using both.

In a separate bowl, whisk the remaining cream of chicken soup, sour cream and milk together. Place 3-4 Tablespoons of chicken mixture in the center of the tortilla. Add a couple tablespoons of cheese. Roll and place seam side down in your pan. Continue until 10 enchiladas are made. Pour sour cream sauce over the enchiladas. Top with cheese.
Bake for 30 minutes or until hot and bubbly. Serve with your favorite side dishes, we had rice and refried beans. Enjoy!
This is the recipe I use, also..,.want to say it came from Taste of Home, but not positive. I made this last week....I use 8 big tortillas and make larger ones! I don't use rotisserie chicken....i cook and shred two large chicken breasts.

I actually divided it into two separate dishes. In the last steps, I made one dish without chiles then added chiles for the other. My husband likes spicy and I don't, so this was my compromise. He cleaned his plate and told me I could add jalepenos to his next time. 😂
I'll definitely make it again.

@wildcat fan So glad you and your husband enjoyed the recipe! My family likes spicy too, and I found the canned green chiles were mildly spicy. Added jalepenos will kick it up even more!
