O.K. I think we need a boost here that brings in some more recipes, a little enthusiasm, a little 'can do', a little effort to get this place humming again. One thing that used to work was to have everyone share tried and true recipes in particular categories. So, I'm going to start a few posts and see if anything happens. Smiley Happy

For this one, what recipe can you share when it comes to soup? Any soup recipe fits the category, cold fruit soups, light brothy soups, hearty soups, etc. This one is a main dish meal in itself, rich and absolutely delicious, but not a candidate for weight watchers. It's perfect after a day in the snow, a cold or rainy day shopping, or any time a good hearty meal is wanted.

The Best Baked Potato Soup

This is a rich, but great baked potato soup.

4 large potatoes
2/3 c butter
2/3 c flour
1 1/2 quarts of milk
Salt and Pepper
4 green onions
1 c sour cream
2 c crisp-cooked, crumbled bacon; real bacon recommended here, not bits.
5 oz of grated cheddar cheese; Tillamook sharp cheddar is our choice.

Heat oven to 350 degrees and bake the potatoes until fork tender.

Melt butter in a medium saucepan. Slowly blend in flour with a wire whisk until thoroughly blended. Gradually add milk to the butter-flour mixture, whisking constantly. Whisk in salt and pepper and simmer over low heat, stirring constantly.

Cut potatoes in half, scoop out the meat and set aside. Chop half the potato peels and discard the remainder. When milk mixture is very hot, whisk in potato. Add green onion and potato peels. Whisk well, add sour cream and crumbled bacon. Heat thoroughly, but do not let it boil. Add cheese a little at a time until it is all melted in. Serves 6 generously.
