1 3/4 cups flour

1 cup cornmeal (I use finely-ground Goya brand)

1/4 cup sugar

2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1 1/4 cups buttermilk

1/2 cup corn oil

1 egg

 

Whisk flour, cornmeal, sugar, baking powder and soda, and salt in bowl.

In another bowl, whisk buttermilk, corn oil, and egg.  Gently stir into flour mixture.

Spread into greased 9" baking pan.  Bake for 25 minutes at 375 degrees.

Cool on rack for 5 minutes.

we like the Krustazes(sp?) honey cornbread. I just made some to go with cream of potato w/bacon soup.

Gotta agree that for $2.50 it is a good mix for an 8x8 pan. Much more flavor than Jiffy.

 

I usually keep cornmeal on hand but it can go rancid, esp since I don't make cornbread often.

Short Cut Cornbread

2 boxes Jiffy cornbread mix

3 eggs room temp.

1 stick melted butter cooled slightly

1-1/4 cups buttermilk ( or make your own )

Do Not follow jiffy box directions!

I use a10- inch cast iron skillet

Use a whisk to get the lumps out of cornbread mix

 

Preheat oven to 350. Use a basting brush to brush some butter on sides and bottom of skillet.  Mix ingredients together pour into pan. Bake for 40-45 min. If oven cooks faster check at 30 min.

Cornbread is moist Best Ever! *

If you like a sweeter cornbread add some sugar

Remember when the copykat recipe of Perkins (I think) cornbread was going around. I pkg. Jiffy mix and 1 small white cake mix?
