Does anyone have any soup recipes that freeze well, don't use chicken, and preferably have no gluten (flour, noodles, etc.)? In addition to my family liking soup for dinner, I try to make enough for my uncle to have in his freezer. He doesn't cook and lives alone (he's the no chicken requirement of the recipe). Recently, I delivered french onion, beef and veggie, and chili to him -- he's eaten them all up. I'm feeling in a rut with ideas for something a little different.

As for the no gluten part -- I can modify most recipes with cornstarch to thicken, gluten free noodles, etc. Soups that start with a roux are more challenging to modify and have the gluten eaters not notice a difference.
