I'm making chicken tortilla soup this weekend and since it's a broth soup, not creamy, I was thinking about adding a package or part of the package of Uncle Ben's spanish rice.  I used to make Spanish/Mexican rice from scratch but am too lazing now and we like the Uncle Ben's.

 

Has anyone done this?  If not, what are your thoughts about the idea.

I make chicken tortilla soup with a cup of milk to add some creaminess.  I use 1 cup of masa harina as a thickener, but a cup of rice sounds tasty also.  Make the soup the way you like it and include your own additions.  Enjoy!

Are you making the Spanish rice and then adding it to your soup? I think that would be delicious and you could play around with how much of cooked rice to add to your soup.

@Bridgegal Make the soup and then add the rice, you won't have to worry about the liquid volume then.  I'm sure it will be delicious, I've used rice boxes to add to dishes previously, just need to monitor salt addition as packaged foods can be salty.

Part of the point of tortilla soup is serving it over tortillas or tortilla chips to absorb the liquid and thicken the soup.

I also made it this week but I served it OVER rice rather than adding it to the soup.  If you have leftoovers the rice will soak up all the liquid.  Better to keep it separate.
