This Loaded Baked Potato Soup from Cook's Country is one of my favorites:

 

8 slices chopped bacon

2 onions, chopped

2 tsp minced garlic

1/2 tsp dried thyme

5 1/2 cups chicken broth

3 lbs red potatoes, peeled and sliced 1/2-inch thick

2 cups shredded extra-sharp cheddar cheese

1 cup cream

1/4 cup minced chives

 

Fry bacon in large saucepan over medium heat until crispy.  Drain on paper towel and refrigerate.  Pour out fat, leaving 2 tbsp in pot.  Fry onions in pot until lightly browned.  Stir in garlic and thyme for 30 seconds.  Add broth, scraping up browned bits.  Bring to boil over high heat.

 

Mix potatoes and 1 1/2 tsp salt in slow cooker.  Stir in hot broth.  Cover and cook for 6 hours on high, 7 hours on low.  Puree soup with immersion blender until smooth.  Whisk in cheese to melt.  Whisk in cream, chives, and 1 tsp pepper.  Reheat bacon in microwave for 30 seconds.  Sprinkle on bowls of soup.

This is from a very old crockpot cookbook and all the varietys of canned diced tomatoes were not available.  I use low salt diced or sometimes the spicy ones instead of stewed tomatoes.  

 

Zesty Vegetable Beef Soup (Crock Pot)

1 lb ground beef

1⁄2 cup chopped onion

2 garlic cloves, minced

2 cups pre-shredded coleslaw mix

1 (10 ounce) package frozen corn

1 (9 ounce) package frozen cut green beans

4 cups spicy vegetable juice

1 (14 1/2 ounce) can Italian stewed tomatoes, undrained

2 tablespoons Worcestershire sauce

1 teaspoon dried basil, crushed

1⁄4 teaspoon pepper

 

1. Brown ground beef and onion in a large skillet. Drain off fat.

2. In a 3 1/2-5 quart crock pot, combine meat mixture and remaining ingredients.

3. Cover; cook on low heat for 8 to 10 hours or on high heat for 4 to 5 hours.

Sounds like a nice recipe.  Think it would be good for using up some leftover roast  beef  instead of ground beef, too.  Also good for stovetop  or oven cooking, if slow cooking isn't practical.

 

I almost always have some Spicy Hot V-8 Juice around---low sodium version preferred if available at the store.

beef noodle soup

 

 

this is not really a recipe but a formula for soup.  take beef short ribs, 1 inion, salt and papper.  place in a crockpot.  add enough beef broth and water to cover.  cook 8 hours on low.  add cooked beef noodles and serve..

 

this is my grandmother's reipe.  she cut the short rib meat into chunks and added to the bowl.

In case you didn't see this when posted several weeks ago...........  I have made this many times.........it's from Paula Deen and everyone who tries it seems to like it.

 

It's easy to cut down if serving fewer people.
