Something that I like to make that is really scrumptious is a LEO - aka lox, eggs and onions. The way I make it is to saute some chopped onions in a frying pan, add pieces of lox and sauté with onions for about 10 seconds. Then add the eggs and scramble. Note that I beat the eggs with some light cream before scrambling. Serve with a really good, fresh garlic bagel and it's just about the most wonderful meal for any time of day!

I often use a little leftover baked salmon in scrambled eggs with cheese -- in fact, DH and I had baked salmon fillets last night, I I enjoyed salmon and eggs this morning, with buttered grits and a big glass of seasoned V8 juice and coffee. I've never tried the stronger-flavored smoked salmon in eggs, though. I will try it soon! I will also try freezing smoked salmon and see how that goes.

I had lox and cream cheese on a bagel for breakfast today. Was only going to eat half of it, but I ate the whole thing. Costco sells great lox and their onion bagels are yummy too. We freeze lox all the time.

Costco has a great selection. But it is a big portion. Have to share it with friends or freeze it.

I was wondering about this also, but apparently, it can be frozen. I buy it at Costco, there are quite a few varieties, so it's good to know that it can be frozen. Costo has the best bagels also, though I am not an expert, the seeded are great with cream cheese and smoked salmon, or anything else.

ETA: It can be used in a pasta sauce, I would make a cream sauce.

I usually eat bagels and lox several times a week - I also love scrambled eggs and lox on a bagel - but one of my favorite things is a smoked salmon quesadilla. You can find dozens of recipes if you search online.
