roasted toms in pasta?!---all day long everyday of the week!!! I would have to add a dollop of ricotta and home made pesto. YESSSSSSSS......![]()

I love roasted tomatoes too, and have baked them at wildly varying temps, depending.
With the pasta dish you mentioned, @Knit-Chick, try adding some slivered fennel to that garlic you're sauteing, just for something different.
You can always deglaze the pan with a bit of wine or broth, and even add heavy cream once in awhile!
Or brown up some crumbled sweet Italian sausage, add it & dust the whole thing w/ ground fennel seeds, or fennel pollen if you're rich! ![]()
I'm a fan of fennel.

That sounds like my Pasta Pomodoro! Pan roasted instead of oven roasted. Yummy. I use basil.

@Knit-Chick I have been making this all summer, my version is easier. Put tomatoes, fresh garlic and fresh basil in a 8x8 pan. Drizzle with olive oil. Roast at 400 until tomatoes are charred, about 25 mins. Remove basil. Take a potato masher and mash everything together. Transfer to a pan with cooked pasta. If this is too dry add pasta water. This is such a light pasta meal my family asks for it every week.

Is there such a thing as cherry tomatoes or grape tomatoes, etc. that DON'T have tough skins?

I just have to share after seeing this post about cherry tomatoes. I drizzle olive oil, add salt, pepper, garlic powder, a touch of balsamic vinegar, basil, and oregano. I roast them on a lined cookie sheet, 400°, till they split open. After they're cooled, I slice fresh mozzarella, and add more seasoning, or balsamic if wanted. Place the mozzarella on top of the tomatoes. Italian bread is a must for dipping 😀. We love it so much, I also made the tomatoes over penne pasta, with fresh spinach, I cook separately with fresh garlic and oil...then I made fresh shrimp cooked in a butter, wine, garlic and oil. Added it all together...was a great dish complete with protein and veggies.
Now, I have to go get more tomatoes...mmmmm.
