Slow roasted tomatoes & pasta

For anyone with extra cherry or roma tomatoes, this is an easy dinner we're having tonight.  Cut in half, drizzle olive oil and a little salt and pepper.  Roast at 250 degrees until they have shriveled up and are nice and sweet. I saute garlic in olive oil, add the roasted tomatoes and angel hair pasta.  Tonight I'll serve with feta but most often it's parmesan.  

 

I'm roasting extra to put in an omlet tomorrow.

@Knit-Chick about how long, ballpark,  do you figure to roast the tomatoes at 250?

I've made this before, delicious...like to add a few kalamata olives

@LizzieInSRQ i usually do cherry tomatoes, so it's about 1 to 1.5 hours on low (250).  I've roasted them at a higher temp too when I don't have as much time.

@phoenixbrd olives would be good!  I've added artichoke hearts in and those are good.

Actually, i do this ,so happen to be ,i have tomatoes,not local not ready here,but a zucchini,and small eggplant,fresh basil ,just stuck in the oven,thanks for post ,i love this type of food. And garlic.
