Enjoy this delicious dish for dinner soon. It is so easy to prepare using a slow cooker.

Slow Cooker Pork Cassoulet

1 lb. boneless pork shoulder, cut into 1-1/2" chunks
1/2 lb.Italian sausage, crumbled
1 can (17 oz.) diced tomatoes, drained
1 large onion, chopped
2 stalks celery, sliced
2 Tbsp. tomato paste
4 cloves garlic, minced
2 tsp. Herbes de Provence
2 cans (15 oz.) Great Northern beans, drained and rinsed
4 slice bacon
1/4 cup grated Parmesan cheese

Combine all ingredients except beans, bacon, and cheese in slow cooker; cover with lid.
Cook on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours.
Add beans to ingredients in slow cooker; cook, covered, on HIGH for 15 minutes or until heated through.
Meanwhile, cook bacon until crisp; drain.
Crumble bacon; sprinkle over ingredients in slow cooker along with the cheese.

This sounds great! French cooking is one of my favorite ways to cook. One question --- I can't use Italian sausage because of an allergy. Do you think this would work with regular sausage crumbled - either hot or regular?

I just bought my first jar of Herbes de Provence when The Spice House had free shipping. I have no idea why I bought it! Wasn't even sure what to do w/ it! LOL

Now I have a recipe for it!

This recipe sounds nice, but not real french cassoulet, which usually has thick bacon, french sausages are not the crumbled kind, and has goose or duck. For sure no parmesan. Cassoulet is from Alsace, so no herbes de Provence either, I am not even sure about the tomatoes.
