Slow-Cooker Creamed Corn with Bacon

Ingredients (serves 20)

  • 10 cups frozen corn (about 50 ounces), thawed
  • 3 packages (8 ounces each) cream cheese, cubed
  • 1/2 cup 2% milk
  • 1/2 cup heavy whipping cream
  • 1/2 cup butter, melted
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 4 bacon strips, cooked and crumbled

Directions

  1. In a 5-qt. slow cooker, combine the first 8 ingredients. Cook, covered, on low 4-5 hours or until heated through. Stir just before serving. Sprinkle with bacon and green onions.

@Chi-town girl   Why oh why did you have to show a picture!  My favorite "meat" is bacon!  My favorite veggies are corn, peas, baked potatoes and butter.  And I love cream cheese with cooked veggies.  Been succeeding with dieting so far but I need  to put this receipt aside so in a month will plan on cooking it!  Thanks for sharing!

That recipe would be great on a buffet table for a group. The cream cheese would add so much richness. I make a smaller amount on top of the stove for just the few of us:

 

5 cups corn

1 cup heavy cream

1 tsp salt

2 tbsp sugar

1/4 tsp pepper

2 tbsp butter

1 cup milk

2 tbsp flour

 

Stir corn, cream, salt, pepper, and butter in saucepan on stove until butter is melted.

 

In a bowl, whisk milk and flour until smooth.  Stir into corn mixture and cook until thick.

@Reilley - my motto...everything in moderation 😉 I don't do 'diets' or severe restrictions  - it just makes me want it more and a boomerang yo-yo reaction.

 

My approach is to eat healthy' and portion control on weekdays. Celebrating on weekends with no restrictions and that's typically when we do take out or go out for meals. 

When you are ready to indulge, you can treat yourself to this recipe. It's written as a large quantity for pot luck. I'm going to make a half portion for a future Sunday meal

@deepwaterdotter - yes, the recipe I found is for a  large pot luck. Thank you for sharing an alternative - you have some great recipes!
