@Spacrazy - you're welcome! I wonder if this could also become a soup by adding chicken stock? An option for leftovers?
It's a large pot luck quantity but easy to cut the recipe in half for a smaller portion

WOW! My eyeballs are salivating!!!🤪 For those that say they do not like cauliflower, this recipe just might change their perspective.😊 It is most assuredly going into my veggie sides rotation!!!

I make a cheesy cauliflower soup, but I cheat and use frozen riced cauliflower.

Since you asked (torn out of the local newspaper):
1 tbsp olive oil
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrot
1/2 tsp garlic powder
8 cups frozen riced cauliflower
4 cups chicken broth
1 tsp kosher salt
1 cup milk
1/4 cup flour
1 cup shredded sharp cheddar
Stir onions, celery, carrots, and garlic powder into big pot with hot oil until slightly softened. Stir in cauliflower, broth, salt, and a pinch of pepper and bring to simmer. Reduce heat, cover pot, and cook until vegetables are tender.
Blend soup with immersion blender (or a potato masher if that is what you have) to desired texture.
Whisk milk and flour in bowl until smooth. Stir into soup over heat until slightly thickened. Take off heat and stir in cheese until melted.
