Per repeat request, this weekend I'm going to make the Olive Garden Chicken Crockpot recipe I posted a short while ago And spaghetti + garlic bread, tossed salad. We'll be watching football and doing home chores
I've added this Lemon Chicken crockpot recipe to my files for a future meal. What sides would you serve with it? Roasted potatoes? Mashed potatoes? Rice? Asparagus or green beans?
I also think it needs more lemon than the recipe-- I want it to be super lemony
For the bouillon, I prefer to use Better Than Bouillon. Thrilled that Costco sells the big jar at a great price

@Chi-town girl - This looks good! I make lemon chicken in the oven, one of our regular meals.
I too use Better Than Bouillon. I have all three in the refrigerator- chicken, beef, and vegetable.
I probably wouldn't serve this with rice. I like your idea of roasted potatoes (possibly added to the Crockpot at some time) and green vegetables.

@Chi-town girlSounds delish! If you like lemony chicken dishes two recipes that are in our rotation are really good. Blue Jean Chef's Lemon Chicken Orzo Spinach skillet dish and Martha Stewart's Chicken Za'atar Potatoes Red Onion Kale sheet pan dish. Both so yummy.

Looks great but I also don't think 3 Tbsp of lemon juice would be enough.
I'd probably cheat and add a few Tbsp of lemon marmalade. It has tiny pieces of lemon rinds in it and can add lemon oomph to a dish. Hmm ... maybe I should call it Lemon Oomph.

This sounds heavenly but I would also add more lemon juice and use Better Than Bouillion. I'd serve this over brown rice or even orzo with a nice salad.

@Tinkrbl44 - Good suggestion for adding lemon marmalade. Yum 😋
Also, I might use a whole cut up chicken instead of just breasts which will feed more of my peeps & provide leftovers. Thinking the leftover lemon chicken would make a nice chicken salad

Slow-Cooked Lemon Chicken
TOTAL TIME: Prep: 20 min. Cook: 5-1/4 hoursYIELD: 6 servings.Ingredients
- 6 bone-in chicken breast halves (12 ounces each), skin removed
- 1 teaspoon dried oregano
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 2 tablespoons butter
- 1/4 cup water
- 3 tablespoons lemon juice
- 2 garlic cloves, minced
- 1 teaspoon chicken bouillon granules
- 2 teaspoons minced fresh parsley
- Hot cooked rice
Directions
- 1. Pat chicken dry with paper towels. Combine the oregano, seasoned salt and pepper; rub over chicken. In a skillet over medium heat, brown the chicken in butter; transfer to a 5-qt. slow cooker. Add water, lemon juice, garlic and bouillon to the skillet; bring to a boil, stirring to loosen browned bits. Pour over chicken.
- 2. Cover and cook on low for 5-6 hours. Baste chicken with cooking juices. Add parsley. Cover and cook 15-30 minutes longer or until meat juices run clear. Serve with rice. (If desired, cooking juices may be thickened before serving.)
Looks and sounds very good. I too like lots of lemon. I would add Coriander, regular salt, skip the oregano and more lemon juice and lemon zest. That should make it more lemony!
