I emailed the Sister Schubert's company to ask a question about storing the starter. They said to use a dish towel to cover the starter when it is on the counter and in the refrigerator. Another recipe said to use a paper towel and rubber band to hold it on.

Either way the starter has to breathe. I also read that you should use non-metal bowl and spoon when making the starter and bread. Smiley Happy Smiley Happy
