SIMPLY DELICIOUS LEMON ICE BOX PIE

Ingredients:

1  9” store bought (or homemade) graham cracker pie crust 

8 ounces block cream cheese (NOT reduced fat)  **softened at room temperature

1  14 ounce can sweetened condensed milk (NOT evaporated milk)

1/2cup fresh lemon juice, about 2 large lemons  

Zest of the 2 lemons 

Whipped Cream (store bought or homemade)

Directions:  

Put the softened at room temperature cream cheese in a mixing bowl and with an electric mixer blend until smooth. 

Add the sweetened condensed milk, lemon juice, and lemon zest and blend until incorporated and smooth.  

Pour into pre-made graham crust and refrigerate at least 2 hours until chilled and set.  

Serve cold topped with  whipped cream just before serving.

Yum. Just up my alley. I think I will make one with Key Lime juice for my grandson. He loves Key Lime and Lemon pies. And so do I!

It's about time they came up with something like that.  Recipes with sweetened condensed milk are ridiculously high in sugar and not good for anyone's health.

Sometimes subbing Splenda for sugar doesn't work out well with things that need to thicken...but will try it - worth the attempt even if I have to drink it! LOL!!
