It's a good thing I didn't blind bake it, because the crust got a little too crispy even so.  Smells delicious, though!

I just bake the pumpkin "pie" crustless in a casserole dish

I bought an adjustable silicone pie crust cover at BB&B, love the darn thing!  Saves me the aggravation of trying to piece together aluminum foil on the edge.   If you go there, check it out.

I have a BBB within walking distance of my house. I go there regulary and I've seen the protectors, but never thought I'd need one.  I bake my fruit pies at 375° and the crusts never burn.  I'll be sure to pick one up next time I'm there.

Looks Yummy!  A goodly slice of that pie, a dollop of whipped cream and a nice hot cuppa and I'd be SET!
