Should I blind bake my pumpkin pie crust?

I opened a can of pumpkin this week and it turned out that I didn't need it - so I'm baking a pumpkin pie - just a little ahead of pumpkin pie season.  

I'm wondering if I need to blind bake the crust.

I never do.  The pumpkin mixture is a custard and needs to be baked at the same time as the crust and just as long.

 

If you were using a filling that didn't require baking, then the crust would need to be prebaked.

Thank you @Carmie.  I suspected that was the case, but wasn't sure. I haven't made a pumpkin pie in some years and last time I did I used a prepared shell.

Speaking of pumpkin pie - I have neighbors that buy the huge pumpkin pies that Costco sells and eat a piece for breakfast every morning as long as they are available.

@DiAnne  That sounds yummy. We buy pumpkins and cook them down and make our own purée and freeze it.

 

i make pies all year long;  however, sometimes I just put the pumpkin pie mixture in a casserole dish and bake it without the crust,  I am gluten free so I don't eat crust. I eat the baked mixture for breakfast or dessert.  I love it.

I never pre-bake my crust for pumpkin pie.  Maybe because it's a custard?  

 

I always do for apple and other fruit pies.

 

Now I need to go research this as it's an interseting question.

 

I will consult the Farm Journal's Complete Pie Cookbook and see if they give a reason.

No,don't blindness, but, if you put a baking sheet in the oven while preheating and the put your pie on that to bake the bottom crust will be crisper - not as likely yo get a little soggy.

I don't blind bake mine.

I did bake a pumpkin pie myself last night!

Just getting that time of year even if the thermometer doesn't say so.

I do several pumpkin pies at Thanksgiving and always have custard left.  I put it in custard cups and bake in water.  Yum!
