Re: Schwabische Maultauchen mit Ei

sfnative, I asked phaedrus@hungrybrowser dot com about this and he sent me this info:

There are articles about and recipes for maultaschen on these sites:

http://en.wikipedia.org/wiki/Maultasche

http://www.germany.info/Vertretung/usa/en/04__W__t__G/04/03/01/Feature__1.html

http://www.saveur.com/article/Techniques/Making-Maultaschen

http://www.food.com/recipe/maultaschen-swabian-pockets-2758

There is a lot of variation in the fillings and added ingredients. The ravioli may be made from scratch or bought ready-to-use. There is a translated recipe for “Maultaschen mit ei” here:

Hi Beebee,

It is really good and the thing is, it doesn't taste like anything else: not like any U.S. food nor like any other ethnic food I've had. It's so good, especially with egg, that I'd recommend trying to find it online from a vendor who can ship it with dry ice. We're lucky to have a local German deli/market/butcher that keeps it in stock. Now I want more next week!

Edited to add: All of those links: Wow, again! Especially my husband - he was all over those and spent lots of time drooling over and translating from German to English so I could read them. Turned out to be great fun and we have so much more information on board now, presently in pieces, that we must organize.
