Scalloped potatoes using evaporated milk

I have some evaporated milk here and was wondering if anyone has a good recipe to make it with scalloped potatoes?  What all goes in it?

My former mother-in-law always made her scalloped potatoes with it and they were wonderful.  I just found this online on the land o'lakes site:

 

Ingredients

2 pounds (about 6 medium) potatoes, peeled, thinly sliced

3 tablespoons Land O Lakes® Butter

1/4 cup chopped onion

3 tablespoons all-purpose flour

1 teaspoon salt

1/4 teaspoon pepper

1 cup water

1 (12-ounce) can (1 1/2 cups) evaporated milk

1/3 cup grated Parmesan cheese

 GET INGREDIENTS

How to make

  1. STEP 1

Heat oven to 350°F. Grease 11 x 7-inch baking dish.

  1. STEP 2

Place potatoes in large saucepan. Cover with water; bring to a boil. Cook 3-4 minutes at medium-high heat; drain. Arrange potatoes in prepared baking dish. Set aside.

  1. STEP 3

Melt butter in same saucepan until sizzling; add onion. Cook over medium heat, stirring occasionally, until onion is softened. Stir in flour, salt and pepper. Gradually stir in evaporated milk and water. Cook, stirring constantly, until mixture comes to a boil. Remove from heat. Pour milk mixture over potatoes. Sprinkle with cheese.

  1. STEP 4

Bake 25-30 minutes or until potatoes are tender and cheese is light golden brown.

  1. @We rescue cats All these ingredients are in my pantry and fridge already so I'm going to try out this recipe.  My left over pandemic stash includes evap. milk, and I hadn't even thought to use it for scalloped potatoes. Very useful recipe, thanks for posting!

@gloriajean @laluzdelmundo @We rescue cats I do some thing similar, I use the condensed milk, a canna cream of celery soup, maybe a whole onion no cheese or flour and cook it in the crockpot.DIL Had prime rib for Thanksgiving, and I made the scallop potatoes in the crockpot, so that when the prime rib was done, the potatoes were done, and it was a great success

@We rescue cats I pretty much make the recipe you provided except I've never partially cooked the potatoes; I slice them thin and into the oven they go. Evaporated milk works very well @gloriajean.

I don't have an actual recipe for scallloped/cheesy potatoes but rather just layer my potatoes with a cheesy mixture that includes S&P, milk, butter and any kind of cheese you like.  I will also throw some cubed or slice up various cheeses in each layer also.  You could certainly use the evaporated milk in place of the milk you would use to make the cheesy sauce.  You'd probably need to add additional milk to it or use more than one can of the evaporated milk.
