Savory Mashed Potatoes

 

5 large potatoes peeled and diced.    

1/4 cup milk

1/2 t. Seasoned salt

3 T. margarine 

1 cup sour cream 

3 oz package cream cheese softened 

1 t. dried chives

1/2 cup butter flavored crackers, crushed

1/4 cup cheddar cheese shredded

Cook potatoes in water till tender and drain. Beat potatoes,milk,seasoned salt and 2 tablespoons margarine in a mixing bowl till fluffy. Mix in sour cream, cream cheese and chives. 

Turn into buttered casserole dish.  Combine remaining tablespoon of margarine with crushed cracker crumbs. Sprinkle on top of potato mixture and bake for 30 minutes in 350 oven. Top with shredded cheese during last 10 minutes baking time. This recipe can be prepared a day in advance. 

 

This is a Goose Berry Patch recipe, I came across it looking for my Holiday dinner recipes. Never made it, I am going to this year. Mix it up a bit. Happy Holidays.

You can also speed this process up by cooking the potatoes in the microwave, cut into uniform peices and cook oh high for about 10 minutes or until done.

No water needed, it is a fast and easy way to make potatoes

This sounds tasty & easy, especially like that it can be prepared a day ahead, but wondering how many does it serve, might need to double the recipe at times depending on that.

Sorry I did not put serving size! The recipe serves 5.

I can't wait to try this recipe; however, to heck with the peeling/boiling when this works perfectly!  Cuts down on the hrs in the kitchen.  Just prepare as you would after mashing, etc.
