I saw this recipe in a magazine and can't find it, so I did it from memory. It turned out so good, and was so very easy.
The original said to cook it in a cast iron skillet so you just use one pot. I did it in a skillet and a baking dish (10 x 10) because I can't lift a cast iron skillet very well.
Smoked sausage cut into bite sizes (1 lb.) I used Eckrich Beef sausage. There is very little grease, so I didn't drain.
Brown with 1/2 cup onion; 3/4 cups of chopped cilantro. I substituted cilantro for chard which was from the original recipe.
2 cans rinsed pinto beans.
Dash of chili pepper and dash of tabasco. Dash of Black Pepper (All Optional)
I didn't add salt because of the ingredients, but you may find it needs it for your family's taste.
1 cup water. Let everything simmer for a few minutes--but you do want some watery juice.
On top, place a can of drained sweet corn.
Mix one package of Jiffy Corn bread and smooth over the top.
Bake for 15 min. at 4:00 degrees. The juice underneath will keep it from tasting dry at the end.
This is delicious, and there is hardly any clean up.
