I know this is a common recipe, but I found a twist on the ingredients that was new to me. I tried it for a party over the weekend and it was a hit.
1lb.ground pork sausage
2 cups shredded sharp cheddar cheese
2 cups cheddar bay biscuit mix ( with seasoning packet )
1/4 cup buttermilk
1 finely chopped scallion
Form into 1 and 1/2 inch balls
chill for 30 min.
Bake at 350 for 25 min.
The cheddar bay biscuit mix makes a delicious difference !

@QVCkitty1. 8 made some one year using Bisquick and cheddar cheese with sausage. They were so greasy, grease sizzled on their outside when I took them out of the oven. I couldn't stand to eat them. The men finished them off.

Years ago a woman I worked with would bring these to office parties. Her recipe used plain biscuit mix and no scallions. Not sure if she fried them or broiled them but everyone loved them.

I have tried making these several times after seeing them on Trisha Yearwood's show and they looked so good. Mine have never turned out good (using bisquick). They were always hard and greasy and dry. I just might have to try again

Is the Cheddar Bay biscuit mix the same as the Red Lobster Biscuit Mix? That's what I've used in the past but I had made them so much that we got tired of them. Haven't made them in several years now.
I've also had sausage balls with a couple of different types of dips. I know one was a basic marinara sauce and I forget what the others have been.

I made her recipe too, and they didn't turn out particularly well. Not greasy, but on the dry side. I thought I might add more sausage if I tried them again, but I haven't bothered.
It was disappointing, because I had made several of her other recipes, and each one was really good. I have two of her cookbooks.

This is our Christmas morning breakfast. I make them Christmas Eve and let them sit in the fridge to get happy. I grate the cheese myself. Grated cheese sold in a bag at the grocery tends to be drier than freshly grated. Also, I use just 1 1/2 cups of Bisquick.
