4 cups sauerkraut, drained and rinsed

1 cup celery, chopped

1/2 cup carrots, grated

1/3 cup onion, chopped

1 apple, chopped

1/3 cup vegetable oil

1/4 cup cider vinegar

1/4 tsp celery seed

1/4 cup brown sugar

salt & pepper to taste

Put sauerkraut in a large bowl. Add celery, carrots, onion and apple. In a small bowl mix oil, vinegar, celery seed, sugar, salt and pepper. Blend well and pour over kraut mixture. Chill until good and cold.

Serves 8-10
