My dad loved these!  cold or sometimes he would stuff a bun with it and heat it up in the oven, all melt-y.... -Here is what he used:

minced ham (food processor works better than chopping)

grated cheddar cheese

minced onion

chopped hardboiled eggs

Sometimes green olives or pickles or relish

moisten with mayo and a little mustard or Durkees to the consistency you like...

Cater, you must be from Pgh. to know about chipped ham.  There is nothing better than Isaly's chipped ham.  I have lived in a lot of places and order chipped ham from the grocery deli and it is never the same.  There is a Publix in the Orlando area that comes the closest I have ever found, not close enough though.

Another delicious way to serve chipped ham is heated in barbecue sauce on a bun.

You are so right!!  I am going to Publix today to try their "chipped" ham.  Most places do not even know what I am talking about when I ask for chipped, I have to describe it and they try several times to shave it that little!!

thanks Mothertrucker, last night when I got the call about these sandwiches my mind went blank I looked in a couple cook books and couldn't find it so I jumped on here to see if anyone else makes these. Yours is almost the same as what we had made before but that was 14years ago when we did them. I found some recipes for these sandwiches today and lord there is at least 20 different ways to make them.  So I thank you so much for posting yours.

gmkb, do not live in Pittsburgh but in our town we had two Isalys stores and they did have the best chipped ham plus ice cream. Always had Isalys chipped ham when we were kids.
