This couldn't be any more simple or fast. Or tasty. We enjoyed it with corn on the cob for an easy Saturday night dinner.
Salt and Vinegar Chicken Sandwich

For four sandwiches:
Olive oil
Salt and black pepper
½ cup flour
2 eggs (beaten)
4 boneless, skinless chicken breasts (pounded to 1/4" thickness)
3 cups crushed Salt & Vinegar potato chips
French Onion Dip
4 soft burger buns
4 leaves Iceberg lettuce
You will need 3 bowls.
In bowl #1: ½ cup flour, seasoned with salt & pepper
In bowl #2: 2 eggs (beaten)
In bowl #3: 3 cups crushed Salt & Vinegar potato chips
Dry off the chicken breasts, then dip them consecutively into bowl #s1, 2 and 3. Set the breasts aside, pressing lightly to secure the crushed chips to the meat.
Heat a large sauté pan over medium heat. When the pan is hot add a Tablespoon or two of olive oil. Add the chicken and cook on one side until golden brown and crisp, 3-5 minutes. Flip over and repeat on the other side then remove.
Build your sandwich by placing a piece of chicken on the bottom half of the bun followed by a good spoonful of French onion dip. Top with a piece of lettuce and the top half of the bun.

You have some creative recipes. I like to get chicken breasts from Market Day(a school fundraiser) because they are smaller and perfect for chicken sandwiches. I swear some of those plumped ones I see at the store look like turkey breasts.

AuntG, I have seen those "plumped ones," and tend to avoid them. I know they say chickens aren't fed hormones, but...
Goldenlocks, in all likelihood, I got this recipe from The Chew. I have not seen Chef Symon's new book.

IamMrsG, thank you so much for posting this . . . I had copied the recipe down, bought the bag of chips and then promptly ate them . . . sigh.
This time I will remember to save some for the recipe!
