From my BF's mother. I'm not sure if the "savory" seasoning is summer savory. She passed away several years ago and was a fabulous cook. 

 

Savory Salmon Loaf

 

14 oz canned salmon

1.5 cups soft bread crumbs

3/4 cups canned tomatoes

1 beaten egg

2 tbsp melted butter

1 tbsp minced onion

1/4 tsp savory seasoning

salt/pepper to taste

 

Combine all ingredients, pack into greased loaf pan. Bake at 350 degrees for about  45 minutes. Makes 6 servings.

I've never eaten any kind of salmon, hard as I've tried I just can't get past the smell.

Salmon Loaf

 

1 or more lemons, sliced

1egg (can use Egg Beaters)

1/2 cup mayo

1/4.cup sour cream (optional)

1 can (15 1/2 oz.) red salmon, drained and rinsed, skin removed -- or 1# baked, fresh salmon steak, skin removed

1 medium carrot, peeled and shredded 

1/2 cup sweet red or green pepper, diced

1 onion, diced

1/4 cup bread crumbs

 

LIghtly beat egg and blend in mayo and sour cream. Add salmon, stirring to flake. Then add all of the rest of the ingredients except for the lemon and mix.

 

Sprray or lightly grease 9x5x3 loaf pan. Bake at 350 degrees for 35-40 minutes. Put sliced lemons on top and return to oven for five minutes

 

Can be served hot or cooled on a rack and served at room temperature

 

This is a recipe that I made often twenty years ago -- have not tried it since. My notes say that I used more carrots and red pepper than called for in the recipe.

@gloriajean  I add sweet relish to my salmon loaf or salmon patties. My husband hates pickles or relish but I threw it in once and he loved it. He still won't eat relish in anything else. I also makes a sauce and I include relish.

I also throw some crushed potato chips or ritz crackers either into or on top of the loaf or burgers.

Edited to add: I just made a loaf today and had extra cooked beans in the frig and some artichokes. Mashed half the beans and left the rest whole. I threw that in and a little extra lemon juice and it's great.

@Coquille, You added the mashed and unmashed cooked beans to your loaf, not the artichokes, right?
