  This past weekend, I prepared a Salade Nicoise, for what will probably be our last Al Fresco dinner of this summer season.

 

  For this dish, you will need a large platter 12"- 14" in diameter. Here is my recipe:

 

                                Salade Nicoise

 

8 red potatoes                             1/2 lb. green beans

tomatoes                                     2 hard boiled eggs

cooked shrimp                            2 cans solid white tuna

black olives                                 capers

 

 Dressing: 1/3 cup tarragon vinegar( or your favorite vinegar)

                  2/3 cup olive oil, fresh ground pepper

                  1 tsp. capers

 

 *  Cook unpeeled potatoes and cool. Cook green beans for 7   minutes.

 

 *    Slice cooled potatoes and arrange on platter. Pour 1/3 cup

       of dressing over potatoes. Then add green beans to platter.

 

 *    Drain tuna and place in center.

 

 *    Slice eggs into quarters and arrange around tuna.

 

 *    Top with black olives and more capers, if desired.

 

 *     Pour remainder of dressing over all and cover with plastic

        wrap. Refrigerate for a few hours, until well chilled.

 

 *     When ready to serve, add chilled shrimp and sliced

         tomatoes.

 

         I made this early in the day, to allow time to chill and

         I served lemon slices and cocktail sauce for the shrimp.

 

         This will serve 4-6.

@rockygems123   It is the evening meal that we will not be eating outdoors. We are surrounded by trees and the mosquitoes come out at dusk. The sun is setting earlier each night. Smiley Sad   This time of year, it also gets cooler in the evenings.

At night, a few days ago, it was only in the 50's. It was warmer on Friday, when we had an early dinner outside.

 

   We usually eat dinner after 7:00 p.m, when my son gets home from work. I have bad reactions to mosquito bites, so I try to avoid them.

 

    Just last week, my son and I were having dinner on the porch.

The sun was going down, but I didn't see any mosquitoes. But the next morning I discovered two mosquito bites on  my toes.

One toe swelled up so badly, with unbearable itching. It has been over a week and the swelling has gone down, but the two bites are still itchy. I have two kinds of medicated gels to use

for the itching.

 

   For the second year, mosquitoes that carry West Nile Virus

have been found in the next town to us.

 

  Mosquitoes have loved to feast on me since I was a child. So I try to avoid being out after dusk.

 

  I do enjoy my porch during the day and will sometimes have breakfast outside and listen to the birds, that I feed in the morning.

Sounds more like maybe "ant" or "spider" bites on toes...

@Enufstuff - what a beautiful presentation! 

 

Your comments about the mosquitos hit home with me, I too appear to be a magnet for those little bloodsuckers. Now that I know I'm diabetic I figure I'm like a trip to Dunkin Donuts for them!

@Desertdi  I was also wondering if it could have been a spider bite. After four days, I said to myself, if it isn't better tomorrow, I'm going to the doctor. The next day, it did seem to be a little better and is improving each day.

 

           Years ago, I got a spider bite on my hand, while gardening. The next morning, I had a red line going up my left arm. I went to the doctor and he put me on an antibiotic. I had to  have my arm in a sling. I'm just so sensitive to everything.

         We are just so sweet and inviting to those critters.

I'm type O positive blood. I wonder if that is a factor?

@Enufstuff - Your version looks great and I will try it! You have such a great presentation - your table looks great! 

 

This was one of the first things I made when I was 14 and my grandmother gave me a French cookbook for Christmas. We have it a lot. My version is a little different. I use Romaine, tuna, green pepper, tomatoes, eggs, black olives, and capers. I toss it lightly like a regular salad. I make my own dressing - using a ratio of 1 big spoon oil to 1 little spoon apple cider vinegar. It's really scientific LOL!
