Not sure why those who are not impressed with Irish food have weighed in on this topic. There is NOT much I don't like about Irish food. We have enjoyed this cocktail with our St. Patricks Day dinner for years. Not for the faint of heart! LOL!
Irish Wake
Fill with ice.
1/4 cup (2 shots) Bacardi 151.
1/4 cup (2 shots) Bacardi Gold.
1/4 cup (2 shots) Curaco Blue.
16 oz. Fresh squeezed orange juice.
Combine the above and garnish with a green maraschino cherry.
This is McQuires recipe which is served in a quart jar. It is a beautiful green color and there should be a designated driver!

I enjoy Irish Soda Bread but never think to make it. @butterfly123 's corned beef and sauerkraut casserole looks good but my DH would never eat sauerkraut. Once a year, I give myself permission to have a milkshake....a Shamrock Shake. It's the only Irish thing I do.

I so adore corn beef and cabbage, St. Patirck's Day is such a fun day. But first we must all celebrate March 14th. Just save a slice for March 17th!!

Love Colcannon! Simple but delicious!
Crisp bacon in a large skillet. When cooked remove and place on a paper towel. Crumble bacon when cool enough to handle.

I've never had colcannon, but two of my favorite ingredients are in here -- potatoes and cabbage. Thanks for posting this recipe; I'm anxious to give it a try. Sounds delicious!

Baked Eggs and Tomatoes
Ingredients:
2 Eggs per person
2 or 3 small tomatoes-sliced
1/2 pint heavy cream
butter
salt and pepper
Directions:
Preheat oven to 350. Grease several custard cups with butter Drop small tomatoes in boiling water for 30 sec. (until skin starts to crack). Plunge tomatoes into iced water to cool. Peel and slice into ¼ to ½ in. slices. Place slice of tomato in bottom of each custard cup. Crack one egg on top of tomato Top with 2 tblsp. Heavy cream Dot with butter Salt and pepper to taste Place custard cups into a Pyrex or corning baking pan. Fill with hot water to halfway up the custard cups. Bake for 15 min. or until the eggs are set but not hard.
