Reuben Casserole 

  • 1 pound sauerkraut, rinsed and drained, with most of the liquid squeezed out
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 1 pound sliced corned beef, torn into large pieces
  • 12 slices Swiss cheese
  • 1/4 cup Thousand Island dressing
  • 4 slices rye bread, torn into smaller pieces
  • 2 tablespoons melted butter
 
Instructions
  • Preheat oven to 350 degrees
  • Grease a 9 X 13-inch baking dish with cooking spray, oil or butter
  • Spread the sauerkraut evenly over the bottom of the baking dish, and season with sea salt and pepper
  • Layer the corned beef over the sauerkraut
  • Layer the Swiss cheese over the beef
  • Spread the dressing evenly over the cheese, and top with rye bread
  • Drizzle the melted butter over the bread
  • Bake for 30 minutes, remove from oven, slice, and serve warm

Really like the looks of this casserole!  Thanks for sharing.  I'm not much of a st Patrick's day fan!

My aunt's soda bread recipe:

 

3 1/2 cups flour

1/2 cup sugar

1/2 tsp baking soda

2 tsp baking powder

1 tsp salt

2 cups sour cream

2 eggs

2 tbsp caraway seeds (if you like them)

3/4 cup golden raisins

 

Stir flour, sugar, baking soda and powder, and salt together in big bowl. 

Beat eggs and stir in sour cream in separate bowl.  Mix into flour mixture with sturdy wooden spoon.

Stir or knead in caraway seeds and raisins.

Place in greased 9" springform pan.

Dust top of dough with enough flour so that patting it into the pan keeps it from sticking to hands.  Cut a shallow X on the top.

Bake for 50 minutes in 350 degree oven.

@butterfly123   I usually make mini reubens with some of my corned beef.

 

Maybe this year I will try this reuben casserole.  Thanks for posting.

Irish Nachos 
 
1 large bag bagel chips
1/2 lb. deli corned beef, chopped into bite-size pieces
1/2 c. sauerkraut
1 1/2 c. shredded Swiss cheese
1 tbsp. horseradish
Russian dressing, for serving
2 tbsp. chives, finely chopped
 
DIRECTIONS
 
  1. Preheat oven to 350 degrees F. Scatter and even layer of bagel chips on a large rimmed baking sheet. Top with about half of the sauerkraut, cheese and horseradish. Add a second layer of bagel chips. Top with remaining sauerkraut, cheese and horseradish. Bake until cheese is melted and the bagel chips are slightly golden, about 10-15 minutes.
  2. Drizzle nachos with Russian dressing and garnish with chives. Serve warm.

My husband loves nachos. Sometimes I bake waffles fries and use instead of bagel chips.

Corned Beef And Cabbage Soup

 

  • 1 to 1 1/2 cups leftover corned beef (diced)
  • 2 cups leftover potatoes (diced)
  • 1 cup leftover carrots (diced)
  • 1 cup leftover cabbage (diced)
  • 1/2 cup onion (finely chopped)
  • 1 cup chicken stock
  • 2 (10 3/4-ounce) cans cream of potato soup
  • 1 cup half-and-half (or light cream or whole milk)
  • Salt (to taste)
  • Black pepper (to taste)
  • Optional: more half-and-half, cream, or milk

Steps to Make It

  1. Gather the ingredients.

     
  2. Dice the corned beef, potatoes, carrots, and cabbage. Chop the onions finely.

     
  3. In a 4 to 6-quart slow cooker, combine the corned beef, potatoes, cabbage, carrots, onions, chicken broth, and cream of potato soup.

     
  4. Cover and cook on low for 4 to 5 hours, stirring about halfway through cooking.

     
  5. Add 1 cup of half-and-half or light cream. Stir to blend and then add salt and pepper, to taste.

     
  6. Cover the pot and cook for about 20 to 25 minutes longer, or until hot. Add more milk or more half-and-half to thin slightly, if necessary.

     
Tips
  • If you don't have leftover potatoes and carrots, use frozen or fresh boiled carrots and boiled potatoes, or use diced canned potatoes. 
  • Condensed soups are often called for in slow cooker dishes, and there is a reason for that. A basic white sauce made with milk would break down and curdle over the long cooking period, while the condensed soup stays smooth and creamy. If you want to get around that, cook the soup with the chicken stock. Make about 3 cups of thick white sauce and add it to the soup near the end of the cooking time along with the cream. 
  • For speedier cooking, prepare the soup on the stovetop. Combine the corned beef, vegetables, broth, and potato soup in a large saucepan. Bring to a simmer. Cover the pan and simmer for about 20 minutes. Add the cream and seasonings and continue cooking for about 5 minutes, or until hot. 
  • No leftover corned beef? Have your local deli slice about 12 to 16 ounces of corned beef about 1/4-inch thick. Dice it and add it to the crock pot.
