We are doing cookie exchange baking day with 10 friends.
Couple recipes call for lots of regular ground cinnamon the girl who bought the cinnamon got Siagon cinnamon. Will this be too strong/spicy.

you can do a 1/2 batch and see if you like it
you may also cut the cinnamon amt called for

@homedecor1I would treat it the same as if you used the standard cinnamon. I've used that and the Vietnamese cinnamon, and use the exact same measurements. I love to bake and have NEVER had an issue. ENJOY!!!!!

Siagon Cinnamon has a better (stronger too) scent and taste than a typical Ceylon (regular) variant you buy in a store. One of the reasons is it having more oil than other varieties. Don't think of the taste difference like you would between lets say a green pepper and habanero. I make my cinnamon buns with Siagon Cinnamon and it offers a robust and thorough taste.

@Yahooey Thank you for posting that. It was so interesting. If you go to the description below the video it shows more brands that they tasted.
The first time I bought Penzeys Vietnamese Cinnamon & opened the jar, I couldn't believe the wonderful smell compared to my jar from the grocery.
I don't shop at Penzeys any more, but I am more aware of the spices that I buy.
It's interesting that they say that even though some of the cinnamons have a bolder taste in the pudding are indistinguishable from each other when used in baked products like cookies.

I want to do that taste test bc some of those tasting are not pleasant.
I guess the rice pudding was sprinkled on after cooking and they mentioned they put a lot in to makre sure it was tasted

We baked today -- cookies using cinnamon were perfect.

I was about to post this question when I came across this thread. Thanks for the information. Someone gifted me a bottle of Vietnamese cinnamon and I wasn't sure if I can use it in my traditional baked goods.

Costco sells the Saigon cinnamon. I use it every morning in my oatmeal it’s delicious.
