These are baked not fried - that is my justification for making!!

2 T flour
1 t salt
1/2 t garlic powder
1/2 t onion powder
1 t smoked paprika

2 pounds chicken wings (separated and tips cut off)

2-1/2 T hot sauce (Frank's Red Hot)
2 T unsalted melted butter
2 T hot pepper jelly, melted

Preheat oven to 500. Line large baking sheet with foil and oil.

In a large bowl mix flour, salt, onion, garlic and paprika. Add the chicken and toss to coat. Spread the chicken on the baking sheet in a single layer and spray with vegetable oil (I use a Misto sprayer). Roast chicken for 45 minutes, turning once or twice, until browned and crispy.

In a large bowl, whisk the hot sauce with butter and hot pepper jelly. Add the chicken wings - toss to coat then serve. Add dipping sauces of your choice or not!

I sometimes substitute Chinese 5 spice for the smoked paprika for a different flavor.
