I do not barbecue but I know many of you do. I took a cooking class last night from a well known local chef and I thought I would share his recipe for barbecue sauce and rub. He brought some of the pulled pork for everyone and it was delicious. He said he did it in a smoker.

DARK ALE BARBECUE SAUCE

2 T vegetable oil
1/2 cup minced onions
3 cups ketchup
1/4 cup molasses
1/4 cup brown sugar
1/2 cup dark ale
1/4 cup pepper jelly
1/4 cup Southern Comfort
1/4 cup apple cider vinegar
2 T Worcestershire sauce
2 T ground mustard
1 t celery seed
Lots of cracked black pepper

Heat oil and sauté onions until tender. Add all of the remaining ingredients. Bring to a simmer and cook for 30 minutes. You may store sauce in fridge for up to a month.

RUB:

1 T each ground pepper, celery seed, kosher salt, garlic flakes
1 t each ground allspice, ground ginger, red pepper flakes
1/2 cup brown sugar
2 T regular or smoked paprika

Combine all ingredients.
