I was looking through the ingredients I had leftover from Christmas and there was a large bag of whole almonds from Trader Joe's so I made this today.  I am going to have to hide from myself if there is going to be anything left for NYE!

 

1/4 cup white sugar
1-1/2 t Kosher salt
3/4 t chipotle chili powder or more per taste
2-1/2 cups whole almonds

1 T honey
1 T water
1 t olive oil

 

Pre-heat oven 350.

Toast almonds on a cookie sheet until golden (about 8 minutes).

 

Stir sugar, salt and chipotle chili powder in a large bowl.

 

Mix honey, water and olive oil in a large skillet.  Bring to a boil and stir in toasted almonds to coat.  Mix almonds into sugar mixture stirring until coated.  Spread in single layer on a baking sheet and cool.
