This is delicious with lamb and is also good with chicken or fish. The recipe is actually for canning but I do not can. This lasts one month in fridge and about six months in the freezer.

3-1/2 cups seeded chopped summer fruit (peaches, plums, nectarines, cherries, apricots, etc.)
3/4 cup brown sugar
3/4 cup maple syrup
1/2 cup sherry wine or cider vinegar
3 T chopped cystalized ginger
1 cup dried fruit (cherries, cranberries, currants, etc)
2 t salt
1/4 cup finely chopped onion
1 clover garlic, minced
1/2 t red chile flakes

Combine all ingredients in a heavy saucepan and simmer for about an hour, stirring occasionally.

Pour into sterilized canning jars and preserve according to directions.

I freeze small containers of this to use as a condiment. It is also good with soft cheese on crackers.
