I didn't do this for a wedding, but I baked cookies for about 60 people at my DH's 60th birthday party. We had a tiki-themed party in the back yard by the pool and I made all the food, except for his big birthday cake. I like to play with rolled sugar cookies, so I used a flamingo cookie cutter and a palm tree cookie cutter (found them both on eBay) and the cookies were adorable. I'm not a great decorator by any stretch, but they turned out well.
I made them the week ahead of the party, then froze them in layers, separated by wax paper. Then I got them out of the freezer the afternoon before the party and my sister and I decorated them. I used Martha Stewart's recipe for rolled sugar cookies.
We do a lot of cookie baking for the Christmas holidays and start baking the Saturday right after Thanksgiving. You can bake your cookies and freeze them with no adverse effects at all! Separate each layer with wax paper and store them in air-tight containers in your freezer. (Remember the old large Tupperware containers? I've used them for decades and they work beautifully.) You can also freeze cookie dough....just make sure everything is air-tight.
