Hi! I am recovering from surgery and happy to be back on Recipe
Swap. I hope you all enjoy this recipe. It has been in the family for years. The pie is beautiful and very tasty. Enjoy {#emotions_dlg.thumbup}

STRAWBERRY PARFAIT PIE

INGREDIENTS:

1 small package Strawberry Jello

1 1/4 cups hot berry juice plus water

1 Pint Vanilla Ice Cream

1 box (12 ounce) Birds Eye Sliced Strawberries (thawed and drained-reserve juice)

1 baked 8 inch pie shell, cooled

DIRECTIONS:

1. Dissolve Jello in hot liquid (berry juice and water to make 1/14 cups) in a 2 quart saucepan.

2. Add Ice Cream by spoonfuls, stirring until melted. Chill until thjickened, but not set (about 15 to 25 minutes).

3. Fold in drained strawberries and turn into pie shell.

4. Chill until firm (20 to 30 minutes)

5. Garnish with Whipped Cream and pastry stars.
