STIR FRIED NOODLES AND CHICKEN WITH PEANUT SAUCE

This is a really quick recipe that serves two people.  

 

1-1/2 T fish sauce
1-1/2 T dark soy sauce
2 t sugar
2 t cornstarch
2 garlic cloves, minced
2 t grated fresh ginger
1-1/2 t curry powder
1/4 cup crunchy peanut butter
1/4 cup water

 

6 oz thinly sliced chicken breast
1 t baking soda

3.5 oz dried rice noodles
2 T oil
1 garlic clove, finely chopped
1/2 onion, sliced
1 cup shredded carrot
1-1/2 cups shredded cabbage
1 cup bean sprouts

 

Finely chopped cilantro (for garnish)

Crushed peanuts (for garnish)

 

Place sliced chicken and baking soda in a bowl and mix.  Set aside for 20 minutes.  Rinse well in colander.  Pat dry with paper towel.

 

Sauce:  Place first 8 ingredients in a bowl and mix.  Add water and mix again.

 

Prepare noodles per package directions.  Set aside.

 

Heat oil in a large skillet or wok over high heat.  Add garlic and onion, stir for 30 seconds.  Add chicken and cook until white.  Add carrot and cabbage cook until it starts to wilt.

 

Add noodles, bean sprouts and sauce.  Toss for 1-1/2 to 2 minutes or until the sauce thickens and coats the noodles.

 

Serve immediately garnished with cilantro and peanuts.  

 

If you have trouble mixing peanut butter, microwave for a few seconds at a time until softer.

 

A good brand of fish sauce is Red Boat and it is sold at 
Trader Joe's.

 

You can change the chicken for pork or leave it out completely.

 

I used coleslaw mix for cabbage and pre-shredded carrots to make it faster.

Thanks, @DiAnne. I make this dish too, but have never had a recipe, so it's much appreciated.

Sounds good & I want to try. Just clarifying the chicken ..... really rinse off the baking soda & drain?? Anyone know what this step is about?

Highlight the recipe, copy, paste into a word processing application on your computer and print from there. HTH.
