This is quick, easy and tasty!

1/4 cup soy sauce
1/4 cup mirin (Japanese sweet rice wine)
2 T sugar (or more to taste)

2 pounds flank steak
8 oz button mushrooms, sliced
1 red bell pepper, julienned
1 yellow bell pepper, julienned
1-1/2 T cooking oil, divided

Whisk soy sauce, mirin and sugar in a small sauce pan. Simmer on low for 3 minutes until sauce has thickened slightly.

Add 1 T oil to skillet over medium high heat. Sear the steak well on both side and remove from pan.

Add the remaining 1/2 T oil to pan. Add mushrooms, saute for about 2 minutes. Add peppers and cook another 2 minutes.

Meanwhile slice steak across grain. Add the steak back into the pan. Reduce heat to low and add the teriyaki sauce and let simmer 1 minute. Serves 4.

After searing steak I stop for a few minutes to let the steak rest and slice it before continuing on with vegetables. If you like a lot of sauce you might want to double the sauce recipe.
