My market has spoon roasts on sale this week.  I have no idea what a spoon roast is, nor the best ways to cook it.

 

Any ideas - please?!?

I've never heard of a spoon roast either.

 

Maybe ask your butcher?

Spoon Roast is not an actual cut of meat, but rather a marketing term for a cut of beef sirlointop sirloin roast or “sirloin beef bottom tips”, or a cut of lamb, that with low and slow cooking comes out so tender you can “scoop the meat with a spoon.”

When I asked, the meat manager at the store asked if I remembered butt roasts. I did. He said this is the new name for them. I've cooked them in the crock pot and have also marinated and grilled them.

I haven’t heard this before but it makes sense to change the “offensive” name after 100 years. Wait til they get to the chicken.

I need to keep my eye out for this.

I love the taste of sirloin but usually don't care for the texture.

I just made a spoon roast for Thanksgiving.  I use my Fanny Farmer cookbook for cooking times.  This is what I did:

 

Bring roast to room temp 2 hours prior to cooking. Rub with olive oil and season with salt and pepper to taste.  Place on rack with fat side up, in shallow roasting pan that has been sprayed with vegetable oil such as Pam.

 

Preheat oven to 550 degrees immediately lower heat to 350 and bake 18 to 20 minutes per pound for medium rare.  (I usually will leave the oven temp up to 550 the first 5-7 minutes to put a bit of a sear on the roast.  This will smoke up the kitchen a bit and sometimes I will set off my smoke detectors but worth it!)

 

I picked my roast up for just under $20 at 4.83 lbs and it feed four of us with leftovers for all.  Hope you enjoy it if you give it a try--Karen

We just had a round sirloion tip pasture roast from Whole Foods that was absolutely delicious!  We roasted it at 325 in the oven for about 2.5 to 3 hrs. and it was wonderful!  They were on sale and I should have bought four of them!
