While I always try to cook healthy meals I am trying to amp it up this year. I tried this last week end for breakfast and it went over very well. Would make a great quick dinner also.
1 t olive oil
3 cups fresh spinach
1 clove minced garlic (optional)
2 eggs, whisked
salt and pepper
4 cherry tomatoes
Parmesan cheese
Add olive oil to nonstick skillet. Heat over med-high heat. When heated add spinach and garlic if using. Toss spinach with tongs until wilted. Season eggs with salt and pepper and pour into skillet. Toss until eggs done (goes very fast). Remove to plate. Cut cherry tomatoes into halves or fourths depending on size. Grate Parmesan cheese over all.
This says one serving but I think it might two serving especially with a piece of toast.
