SPINACH, APPLE AND CHEDDAR CHEESE SALAD

1/4 c balsamic vinegar
1/4 c pure maple syrup
1/4 c olive oil (I use a little less)

2 6 oz packages baby spinach leaves
2 large unpeeled Granny Smith apples, thinly sliced
8 oz extra-sharp cheddar cheese cut into 1/2 inch cubes
1/2 c chopped toasted walnuts or pecans

Combine vinegar, maple syrup and oil in small bowl - whisk to blend. Season to taste with salt and pepper.

Combine spinach, apples, cheese and walnuts in a large bowl. Toss with enough dressing to coat. Season salad to taste with salt and pepper.

8 servings

I find this amount of dressing works for two salads but it probably depends on how much salad dressing you like.
