This is definitely not a warm weather meal but it is a cozy meal on a rainy night.
1 T olive oil
1 pound kielbasa or smoked polish sausage, sliced
1-1/2 cups diced onions
2 cloves garlic, minced
2 cups chicken stock
1 10 oz can RoTel diced tomatoes with green chilies
1/2 cup heavy cream
8 oz uncooked penne pasta
1/2 t salt
1/2 t pepper
1 cup shredded Monterey Jack cheese
1/3 cups thinly sliced green onions
In an oven safe skillet heat olive oil until very hot. Add the sausage and onions. Cook until lightly browned. Add the garlic and cook 30 seconds. Add the chicken stock, RoTel tomatoes, cream, pasta, salt and pepper. Stir and bring to a boil. Cover and reduce heat to low. Simmer until the pasta is tender (about 15 minutes). Remove from the heat and stir in 1/2 of the cheese. Top with remaining cheese and green onions. Place under the broiler for a few minutes until the cheese is melted, browned and bubbly.

That looks like a fabulously good variation of a sausage pasta alfredo dish that I make at least once a month. Can't wait to try it, no matter what the weather.

Edited to add: We were evidently thinking alike, because I made a Spicy Chicken and Sausage Stew this evening. I've posted that recipe.

OHHHH, my family is going to love you! And they are really going to think I am on my deathbed if I make this-LOL! I don't care for pasta but my poor deprived family LOVES it. Everytime I make pasta, they think I am ill-when I make this, they may call the funeral home for me! Thanks so much for sharing this! ![]()

That is funny because I don't really care for pasta either! This is a fast easy dish and there really is not that much pasta in it.

Maybe this dish will make me a convert! At least I can pick around the pasta if nothing else. When I make spaghetti with meat sauce, I eat the meat sauce by dipping bread in it while they eat the pasta! If I'm really being good, I just eat salad!

Agree. Big pasta sauce fan here..........fan of pasta itself, not so much. I almost always cut the amount of pasta in a recipe down by at least one-third.
