SPAGHETTI and MEATBALL SOUP!

Easy and delicious, this soup is great anytime but especially good on a cool or cold evening.  Add some crusty garlic bread and you have a complete meal.

*Note:  The fresh basil leaves make this soup special.   

 

SPAGHETTI AND MEATBALL SOUP*

 

  • 1 pound mini meatballs,  store-bought
  • 4 cups chicken broth
  • 3 cups marinara sauce, homemade or store-bought
  • 1 bay leaf
  • 8 ounces spaghetti, broken into 1-1/2-inch pieces
  • 1/4 cup fresh  basil leaves, minced
  • 1/4 cup freshly grated Parmesan cheese

DIRECTIONS:

  1. Prepare meatballs according to package instructions; set aside.
  2. Whisk in chicken broth, marinara sauce, bay leaf and 3 cups water in a large stockpot or Dutch oven over medium heat; bring to a boil.
  3. Stir in spaghetti and meatballs; reduce heat and simmer until spaghetti is tender, about 10-12 minutes.
  4. Serve immediately, garnished with basil and Parmesan, if desired.

 Sorry for the blank post above. Any idea if you can fix this recipe in a Crock-Pot? Looks delicious!

LOVE spaghetti and meatballs but as a soup? Ummm no thanks.

@Posh Poodle  I have not tried this soup in a crockpot, but if I did I would cook all the ingredients in the crockpot for the normal time less about a half hour.  I think I would then add the broken noodles and cook the last half hour or so on high so the noodles cook through.  You might have to add some extra liquid (chicken broth and/or sauce) if you see it's absorbing too much liquid.   

 

Please let us know, if you try it in the crockpot.

This was delicious, a hit with everyone, even my picky 12 year old grandson. Making it again this week. Thanks for sharing.
