SOUTH-OF-THE-BORDER SUMMER SQUASH

The Food and Nutrition Police will probably denounce this one, but it sure is good once in a while.

 

For 8 servings..........

 

1 pound yellow squash, sliced

1 pound zucchini, sliced

2 cups crushed tortilla chips

1 can cheddar cheese soup, undiluted

1 can cream of mushroom soup, undiluted

1 4.5-oz. can chopped green chiles

1/4 cup chopped onion

2 large eggs, lightly beaten

2 tablespoons taco seasoning

1 cup shredded sharp Cheddar cheese

4 bacon slices, cooked and crumbled

 

Cook squash and zucchini in small amount of boiling water in medium saucepan about 8 minutes or until tender.  Drain.  Press between layers of paper towels to remove excess water.

 

Combine vegetables, tortilla chips and next 6 ingredients.

 

Spoon into lighty greased 13- x 9-inch baking dish.  

 

Sprinkle with cheese and bacon.

 

Bake 450 degrees about 30 minutes.

Sounds like a great side dish - thanks for sharing!  By the end of summer I'm always looking for different ways to use up all the summer squash.

 

To me, what I eat is all about moderation.......  good grief, why do folks have to be so rude.

That sounds super delicious.  Its would be a great, different addition to a barbecue.  Thanks for posting.
