It's finally cool here in SF and the fog rolled in nice and thick.

 

Time for soup.  Nothing fancy, just a basic lentil soup in chicken stock with diced tomatoes, onion, garlic, cumin and smoked paprika, sliced carrots and sliced zucchini.

 

What are your favorite soups to make for this time of the year?

Vegetable Soup, Chicken and Wild Rice Soup and, if it counts as a soup, Chili!

I think if you make your chili so it has some liquid, it can count as soup Smiley Happy

 

I love veg soup, you can do so much with it, I like it made into a minestrone for one.

This past weekend, I made Italian Wedding Soup, Bean Soup with ham and sausage and Tortillini and Spinach Soup.

 

Almost every weekend during the colder months I make at least two kinds of soups in a great big pot that holds about 4 gallons.  We eat some and I freeze the rest.  My kids stop by and raid the freezer on occasion and take soup home.

 

I love potato soup and make it often in small batches because it doesn't freeze well at all. I do the same with French Onion Soup made really good with a very large splash of Lambrusco added for flavor.

I think split pea is my all time favorite.  I usually make right after Easter with the leftover ham and bone.

@Noel7 the only soup I make is split pea so I will be hunting down a ham for either Thanksgiving or Christmas.  It comes out so delicious out of the pressure cooker and @alliswell thanks for the heads up on adding a bit of sherry as I will try that this year . . . Smiley Happy

Last week I had some cauliflower to use up, so I roasted it with some garlic, meanwhile I sautéed  some onion and carrots. I added the cauliflower to the veg. And then added chicken broth, and spices ( salt, pepper more garlic,and a touch of curry powder. I blended it with my immersion blender, and added just a little milk and about a Tbs, of butter. It was really good , and with things I already had on hand.

I love it that you make soup so often during colder months @Carmie  That's what I want to do do this winter.

 

We also love variations on Italian Wedding Soup. In the past I usually made one I thought was from the Dom De Louise cookbook.  I don't see it now, I'll have to go through the book.

 

We make a basic one with tortellini, spinach and Parmesan, my daughter's favorite.

I never thought of using the pressure cooker, I'll bet that's so much faster!

 

My standard recipe has red pepper flakes in it, I'll have to try it with sherry instead.
