I used to make a salmon stuffed baked potato but I've lost the recipe. I remember baking the potatoes, adding canned salmon, and a bunch of other things (including cheese perhaps?), stirring ingredients together, then restuffing the potato. I can't even remember if it gets baked again. All I know is they were delicious and leftovers can be reheated. I probably got it out of a Good Housekeeping or Real Simple magazine circa 1990. Sound familiar?

Just did a quick search online and several recipes showed up for twice baked potato w/salmon. Try this and see if any of the recipes come close to what you lost. Good luck.

Your post made my mouth water so I googled twice baked salmon stuffed potato. At least three references came up from taste of home, my recipe, a couple others. Both dot coms. I'm trying one of these recipes soon, I have a ton of canned salmon around here and all I ever make is salmon loaf.

The concept reminds me of a recipe my mother used to make, called Potunas. Similar concept, but using tunafish. Very simple--potatoes, tuna, mayo, green onions, cheese. I remember loving them as a kid, but I'd forgotten about them.
Possibly they'd be even cheaper than the salmon version, especially if you use chunk light instead of white tuna. I use chunk light in oil for my tuna Newberg because the flavor is stronger (which I like), and probably would with these.

Thanks to all who responded. I do know sour cream was not an ingredient as I am not a fan, but I will find it soon with Bing. It is just that good.

@goldensrbest Art Ginsburg did pass away, I looked up the date of his death, I always enjoyed him and his recipes:

I think I have every single one of his cookbooks.
Right now they are packed up in a box ready to be donated to the library for their Friends of the Library book sale or Goodwill.
