This is one of my daughter's favorites.

2 bundles soba noodles (from 500 gram package)
4 T toasted sesame oil, divided
1 T minced fresh ginger
1/4 cup honey
1/4 cup creamy peanut butter
3 T rice vinegar
1/4 cup soy sauce
1-1/2 t chili oil
8 green onions sliced
1 cup shredded carrots
1/2 cup julienned red pepper
1/2 cup chopped peanuts

Cook noodles according to package directions. Drain and toss in bowl with 3 T sesame oil.

Heat remaining oil in a skillet over low heat. Saute ginger until softened. Add honey and peanut butter and stir until melted. Add vinegar, soy sauce and chili oil. Mix well.

Pour over noodles and toss to coat. Stir in green onions, carrots, red bell pepper and peanuts. Garnish with additional sliced green onion.

Serves 6
