Just made this (I have made it many times before). I wish I had a better measurement for the soba noodles but I get them at an Asian market and nothing is in English! I am sure you can figure out what works for you.

2 bundles soba noodles (from one 500 gram package)
4 T toasted sesame oil, divided
1 T minced fresh ginger
1/4 cup honey
1/4 cup peanut butter
3 T rice vinegar
1/4 cup soy sauce
1-1/2 t chili oil
8 green onions, sliced
1 cup shredded carrots
1/2 cup julienned red pepper
1/2 cup chopped peanuts

Cook noodles according to directions. Drain and toss in a bowl with 3 T sesame oil.

Heat remaining oil in a skillet over low heat. Saute ginger until softened. Add honey and peanut butter and cook until melted. Add vinegar, soy sauce and chili oil. Stir to combine.

Pour over noodles and toss to coat. Stir in and garnish with green onions, carrots, peppers and peanuts.

Serves 6
