SLOW-COOKER CHICKEN, RICE & VEGETABLE SOUP

Makes 6 servings in a 3-quart slow-cooker

 

1 (10 oz.) can of chicken chunks (I would use chicken I cooked myself or a rotisserie chicken)

 2 (10-oz.) cans condensed cream of chicken soup

3 cups of water

1 (16-oz) package of frozen mixed vegetables

2 chicken bouillon cubes

3/4 cup uncooked rice

 

Combine all ingredients except rice in slow cooker.  Cover and cook on HIGH for 2-3 hours.  Stir in rice and cook on HIGH an additional hour or until hot, stirring twice.
